This cheese is made with fresh cow’s milk and whey. It is smooth, soft and delicate, and has a very faint flavor of curds. Technically in the ricotta family, its mouthfeel is somewhere between a ricotta and a mozzarella. It is not salted, and resembles tofu in texture. Like tofu, it takes on the flavors of which it’s paired. However, this cheese is a standout on its own. All it needs is a drizzle of a superior extra virgin olive oil and a sprinkling of sea salt and cracked black pepper. There is something magical about the simplicity of this presentation.
